Today we are going to talk about yummy recipes for the 4th of july – yummy and healthy food! Because food doesn’t have to be unhealthy to be delicious, right?!

Ingredients:

Bread

  • 2 1/4 cups bread flour, divided
  • 3/4 cup plus 2 tablespoons warm water (100° to 110°), divided
  • 1 package dry yeast (about 2 1/4 teaspoons)
  • 1 tablespoon extravirgin olive oil
  • 3/4 teaspoon salt
  • 1 tablespoon bread flour
  • cooking spray

 

Toping:

  • 2 tablespoons balsamic vinegar
  • 1 tablespoon extravirgin olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 garlic cloves, minced
  • 4 cups (1/4-inch-thick) slices plum tomatoes

Asparagus cherry tomato salad

Ingredients:

  • 1 cup cherry tomatoes cut in half
  • 1 1/2 pound asparagus
  • 2 tsp orange juice
  • 1 Tbsp balsamic vinegar
  • 2 Tbsp shredded Parmesan cheese
  • 1 tsp minced garlic
  • 1/8 tsp black pepper
  • 1/8 tsp table salt

Green bean, chickpea and tomato salad

Ingredients:

  • 2 cups green beans, trimmed
  • 4 cups coarsely chopperd tomato
  • 1 cup thinly sliced red onion
  • 1/2 cup crumblrd feta cheese
  • 2 tablespoons chopped fresh mint
  • 2 tablespoons red wine vinegar
  • 1/2 teaspoon salt
  • 2 1/2 teaspoon extravirgin olive oil
  • 1/4 teaspoon black pepper
  • 1 (15 1/2-ounce) can chickpeas, rinsed and drained

For vegetarians Quinoa burgers with caramelized onions and chipotle lime mayo

Ingredients

For the burgers:

  • 8 high fiber rolls or hamburger buns (I used Eli’s Bread Brioche Hamburger Rolls)
  • 1 cup uncooked quinoa
  • 1 cup cannelini beans, drained and rinsed
  • 1/2 cup Panko breadcrumbs
  • 1/4 cup liquid egg substitute
  • 4 garlic cloves, minced
  • 1/2 cup reduced fat Mexican cheese blend, shredded
  • 1/2 tsp paprika
  • 1 tsp coriander
  • 1 tsp salt
  • 1/2 tsp black pepper

For the Caramelized Onions:

  • 2 large yellow onions, thinly sliced
  • 1 tbsp light butter
  • 1/2 cup beer (I used Samuel Adams Winter Lager)
  • For the Chipotle Lime Mayo :
  • 6 oz plain, nonfat Greek yogurt
  • Juice and zest from 1 lime
  • 1 tbsp reduced fat mayonnaise (I like Vegenaise)
  • 1 tsp ground chipotle pepper (or more, to taste)
  • Salt

Ingredients

  • 1 package of light Hamburger Buns (8 buns)
  • 32 oz. extra lean ground beef
  • 1/4 cup egg whites
  • s packet of dry ranch seasoning/ salad mix
  • 4 minced garlic gloves
  • 1 tsp salt
  • 1/2 tsp pepper

Cajun chicken wrap

Ingredients:

  • 3/4 pound uncooked boneless, skinless chicken breast, cut into strips3 Tbsp Cajun seasoning
  • 4 medium tortillas, flour, fat-free
  • 1 Tbsp all-purpose flour
  • 1/2 small onion(s), red, thinly sliced
  • 1 tsp paprika
  • 2 cup mixed baby greens
  • 3 tbsp Cajun seasoning
  • 1/2 tsp Cajun seasoning
  • 8 medium basil, leaves
  • 1 1/2 tsp fresh lemon juice
  • 4 tsp fat-free mayonnaise
  • 1 small tomato cut into strips
  • salt and pepper to taste
